Breakfast Burritos


Breakfast burritos are the perfect grab and go breakfast that can be meal prepped so you don't have to cook every day! My clients LOVE this easy and healthy option!

Here's what you're gonna need: whole grain tortillas, eggs or tofu, veggies, and any additional toppings such as hot sauce, salsa, avocado or guacamole, cheese, etc.

1. In a heated skillet, add a quarter size drop of oil and add sliced veggies. Cook until slightly tender and golden brown. Set aside and allow to cool.

2. Scramble eggs and cook in a skillet until cooked through. Set aside and stir occasionally to let out steam until completely cooled. Lay out tortilla and add a scoop of cooled eggs.

3. Add remaining toppings.

4. Roll it up! To heat or reheat, place on a heated non-stick or greased skillet on each side until slightly golden brown and heated through.

5. Make a whole bunch, wrap 'em up in seran wrap or foil, and re-heat later!
