Balsamic Quinoa Salad


This is an easy recipe to one of my favorite cold salads! Here's what you're going to need....

*If you can't find currants, you can always use raisins instead.

*Edamame can be found in the freezer section, pre-shelled.

You will also need quinoa! Once it is cooked, stir thoroughly to cool completely before adding in the other ingredients. Mix quinoa with other ingredients, toss with balsamic vinaigrette dressing, and add salt and pepper to taste. Chill before serving. Enjoy!!
