A DELICIOUS dish that only takes about 10 minutes of prep work!
Makes 4 servings
1 cup uncooked quinoa
1 cup uncooked lentils
Raw veggies (I used beets, sweet potatoes, broccoli, mushrooms, onion, and kale)
1. Preheat oven to 400 degrees. Chop all veggies (except kale), add to a baking dish or pan, toss in a little olive oil, and sprinkle on salt, pepper, and garlic. Roast for about 30 minutes until veggies are slightly tender and golden.
2. Cook quinoa and lentils according to package directions. Toss with a small amount of olive oil, salt, and pepper. Finely chop kale and add to hot quinoa and lentil mix.
3. Combine veggies, quinoa, and lentils and enjoy!
