This recipe is full of heart healthy fats and incredibly flavorful! Here's what you're going to need:
1/2 cup almonds
2 Tbsp. fresh dill
4 tsp. dijon mustard
1 Tbsp. olive oil
1 tsp. salt
1 tsp. black pepper
1/2 tsp. garlic powder
1lb salmon, fresh or thawed from frozen
Preheat oven to 400 degrees F.
Lightly coat a rimmed baking sheet or glass baking dish with a small amount of oil or cooking spray.
Finely chop almonds with a knife, or food processor but leave slightly course (not a powder).
Next, finely chop dill.
Then, add zest from 1 lemon. You can use a fine cheese grater if you don't have a zester.
Combine in a bowl and add 2 tsp. mustard, olive oil, salt, pepper, garlic powder, and juice from half of the lemon and mix.
Place salmon fillets in your baking dish and top with remaining dijon mustard and the juice of other half of the lemon.
Add almond mixture over salmon fillets.
Feel free to add in some veggies and bake for 7-9 minutes.
When finished, the inside should no longer be raw and the fats should turn visibly white.
Divide into 4 portions and enjoy!
