
This recipe only takes about 10 minutes to make and is delicious! Miso is full of probiotics (living bacteria) that keep your digestive tract healthy to build a strong immune system, help digest your food, create mood boosting neurotransmitters like serotonin and dopamine, and control cravings!
Ingredients:
8 cups vegetable broth
1 box noodles (I used lentil noodle pasta that is full of protein!)
1 cup of sliced mushrooms
3 Tbsp. oil (preferably sesame or coconut oil for flavor)
1 Tbsp. minced garlic
Optional: tofu, drained and diced
1/2 cup white miso paste
1 sheet of seaweed
Sriracha hot sauce to taste
Here's the miso and pasta I used for the recipe. The pasta is made with lentils and has 25 grams of protein! :)


Directions: Heat a large pot over high heat and add vegetable broth. Bring to a boil and add pasta, mushrooms, oil, and garlic. Turn heat down to medium - high so it gently boils until pasta and mushrooms are tender and cooked. Add tofu if you are including it. Turn heat off and allow to slightly cool down for 5-10 minutes. Spoon about 1 cup into a bowl. Add about 1.5 Tbsp of miso paste per bowl and use a fork to completely dissolve. Add more for more flavor if desired. Break seaweed into seaweed into small pieces and stir in with Sriracha hot sauce to taste. Enjoy!
*Miso should be added to each individual bowl after soup is reheated to help keep the good bacteria in the miso alive! Too much heat will kill them!
