
This salad is super simple and full of flavor! It is full of the potent cancer-fighting antioxidant glucosinolate and vitamin C that is required for detoxification. It is truly a superfood detox salad so eat it up! Because it is made with cabbage and brussels sprouts, It holds up well if you make a few days worth. I personally like this salad better after a day or two.
Makes about 4 servings
Ingredients:
3 cups sliced cabbage
2 cups sliced brussels sprouts
1 cucumber, diced
1 cup cherry tomatoes, cut in half
1/4 cup extra virgin olive oil
Juice from 1 lemon
Salt, pepper, & garlic powder to taste
Directions: If using whole cabbage and brussels sprouts, wash and slice. Wash and slice tomatoes and cucumber and toss with shredded cabbage and brussels sprouts. In a separate bowl whisk oil, lemon, and seasonings. Toss with veggies and refrigerate for at least 15 minutes before serving. This salad holds up great for a few days! I prepped a big bowl to last for 3 days!
