Quinoa Broccoli Bites


These Quinoa Broccoli Bites are super delicious and easy to make! They can be small, bite-sized snacks or made into bigger burgers. They are full of cholesterol-lowering fiber and compounds that fight off cancer! Here's what you're going to need:

Ingredients:

Olive oil, to coat baking dish

31oz northern beans

3/4 cup cooked white quinoa

2 eggs

1/2 cup sweet onion, finely diced

1 cup broccoli, chopped

1 tsp. garlic, minced

salt, black pepper, ground red pepper, to taste

Directions: Preheat oven to 350 degrees. Add a little olive oil just to coat the bottom of a large baking dish. Rinse and drain beans well. Add to a large bowl and mash with a fork or hands to make a paste. Add all remaining ingredients and mix until thoroughly combined. Form into small patties and line along baking dish. Place in oven and bake for 20 minutes or until golden brown on top and held together.

Top with hummus, avocado, or your favorite topping of choice!
