This is definitely one of the BEST breakfasts I've ever had! It is so creamy and delicious! The cauliflower mix makes about 5 servings.
Olive oil or coconut oil (I used coconut oil but I like coconut flavor)
1 head cauliflower
.5 tsp. minced garlic
1/3 c. coconut cream or organic butter (I used coconut cream)
2 cups raw spinach
Salt, pepper, cayenne, oregano to taste
Directions: Wash cauliflower, chop into small bit sized pieces, and set aside. Heat a medium saucepan or pot over low-medium heat and add about 2 tablespoons of olive oil or coconut oil. Once warm, add cauliflower pieces and stir. Cover pot and occasionally add 1-2 Tbsp. water as needed to keep from burning. As cauliflower begins to soften (about 5-8 minutes), add minced garlic and continue to stir and cook for another minute. Add seasonings to taste and coconut cream (or butter if you don't want the coconut flavor) and stir. Continue to cook until cauliflower is soft. Be patient, this takes a little time but it's so worth it! Add in spinach, stir, and add any additional seasonings if needed. Remove from heat and scoop out 1 cup into a bowl.
In a separate skillet, fry or poach an egg and add on creamy cauliflower mix!
