This recipe idea is great for you if you're tight on time or don't like to make cooking a big process. I threw this together in the middle of the day for a quick and healthy lunch! I love using lentils because they have heart healthy fibers and are a great source of protein without a lot of prep work.
Pre-cooked lentil or soup packet (I used Yellow Tadka Dal by Trader Joes but you can find similar products at most grocery stores).
Veggies: I used zucchini, mushrooms, and spinach but you can use whatever you have!!
