7 Minute Lentil Stew

I loved this warm and hearty recipe and I used a little shortcut to make it REALLY easy and ready in less than 7 minutes.

This recipe idea is great for you if you're tight on time or don't like to make cooking a big process. I threw this together in the middle of the day for a quick and healthy lunch! I love using lentils because they have heart healthy fibers and are a great source of protein without a lot of prep work.


  • Pre-cooked lentil or soup packet (I used Yellow Tadka Dal by Trader Joes but you can find similar products at most grocery stores).

  • Veggies: I used zucchini, mushrooms, and spinach but you can use whatever you have!!

Directions: Wash, slice, and sautee veggies in a small amount of oil. Season to taste (I used salt, pepper, garlic powder, and cayenne). Once cooked, add lentil or soup packet and heat to desired temperature. And voila!
