These might be the healthiest and tastiest cookies ever. This is my new favorite recipe... so easy, so healthy, and SO yummy.
You can make this with or without the protein powder. Protein powder adds a little extra protein but both versions are great! You can use any protein powder you want but different protein powders may create a different texture. I used Pure Paleo by Designs for Health and it turned out SO DELICIOUS. I chose this protein powder because it has a really nice creamy vanilla flavor and is a clean high quality product.
2.5 cups almond flour
1/3 cup monk fruit, allulose, or sweetener of choice
1 scoop vanilla protein powder
1/4 tsp. sea salt
1/4 cup coconut oil (melted)
1 egg whisked
1/2 tsp. vanilla extract
Directions: combine all dry ingredients. Mix in melted coconut oil then whisked egg and vanilla extract. Shape into cookies and bake at 350 degrees for about 10 minutes or until just golden brown on the edges.
