This recipe is SO easy and such a delicious alternative to ice cream. It's not that I'm an ice - cream hater... this yummy alternative was stumbled upon when I realized that I had blueberries, coconut milk, and vanilla protein powder and then the magic came together....
Here's what you're going to need:
1 can Unsweetened coconut milk - refrigerate ahead of time to separate liquid & fat
1 cup Frozen Blueberries
1 scoop vanilla protein powder
For the protein powder, I used Pure Paleo Vanilla by Designs for Health but you can use any kind you want. Different protein sources do change the consistency so you might need to make adjustments to the recipe ratios. I like adding the protein powder for flavor and a thicker consistency but you could try skipping it and adding a diffe
