Blueberry Coconut "Ice Cream"

This recipe is SO easy and such a delicious alternative to ice cream. It's not that I'm an ice - cream hater... this yummy alternative was stumbled upon when I realized that I had blueberries, coconut milk, and vanilla protein powder and then the magic came together....

Here's what you're going to need:

  • 1 can Unsweetened coconut milk - refrigerate ahead of time to separate liquid & fat

  • 1 cup Frozen Blueberries

  • 1 scoop vanilla protein powder

For the protein powder, I used Pure Paleo Vanilla by Designs for Health but you can use any kind you want. Different protein sources do change the consistency so you might need to make adjustments to the recipe ratios. I like adding the protein powder for flavor and a thicker consistency but you could try skipping it and adding a different sweetener, such as frozen banana but you would be missing the protein .

I used Designs for Health because they are tested for purity and contamination of heavy metals, pesticides, hormones, and any artificial chemicals that often sneak into generic protein powders. When choosing a protein powder, make sure there are no artificial sweeteners (such as sucralose or aspartame) or food coloring. I trust the protein powder brands that are provided through this practitioner dispensary below. You can get access through the link below and get 15% off retail pricing if you're looking for a high quality protein powder. I personally like Designs for Health, Ortho Molecular, and Thorne Research.

Directions:

  1. Make sure you refrigerate the canned coconut milk ahead of time. Once chilled, open can and skim coconut cream off top and discard the coconut water.

  2. Add coconut cream, blueberries, and protein powder into a blender and blend well.

  3. Transfer to a container and put in freezer. Freeze for at least 1.5 hours or until frozen.

Enjoy!
