Kale & Zucchini Protein Pasta

This is another SUPER simple recipe! You can make things homemade but I also want to show you my favorite shortcuts to eat healthy but keep it really easy and quick too!

As you can see, I was still hanging in my PJs on this Sunday afternoon just tossing together this warm and tasty lunch while putting together my 3-2-1 Nutrition Newsletter. I didn't plan to feature this lunch but it was so good I thought I'd give it a chance to shine :)




Marinated Artichoke Hearts

Protein Pasta (I used Trader Joe's Red Lentil Pasta)

Olive Oil

Salt, garlic powder, cayenne, fresh or dried herbs to taste

Red Sauce or I used Trader Joe's Eggplant Garlic Spread

Directions: Wash and slice veggies. Preheat a skillet over medium heat and add drained artichoke hearts. Add in zucchini and kale until gently cooked.

In a separate pot, cook pasta according to directions. Don't overcook or else it turns to mush! Drain and rinse with cool water. Toss with olive oil and add salt and garlic powder to taste. I added fresh basil but you could also do dried herbs instead! Top with Red sauce or eggplant garlic spread and you're good to go!
