Mango Walnut Kale Salad


1 bunch kale, stalks removed, leaves thinly sliced or 1 bag pre-chopped Kale

1/4 cup extra virgin olive oil

1 lemon, juiced

a few dashes salt

2 teaspoons honey

freshly ground black pepper, to taste

1 mango, diced

1/4 cup walnuts

Directions: Combine kale, juice of one lemon, a drizzle of olive oil and a sprinkle of salt in a medium bowl. Using your fingers, massage the kale until it is soft and silky, about 2-3 minutes. Set aside. Whisk together the rest of the olive oil and honey together. Drizzle on top of kale. Heat a skillet on low-medium heat and slightly warm walnuts until slightly toasted. Add mango chunks and walnuts to salad.

Toss and enjoy!!
