Healthy Gifts in a Jar

Change up your gift giving from cookies to instant delicious and healthy meals in a jar!!! I made a Sun-dried Tomato and Mushroom Pasta and Moroccan Soup! 

 

 

Sun-dried tomato and Mushroom Pasta: 1 16oz jar

1 1/2 cups pasta, dry (I used chickpea pasta that has 25g protein per serving!)

1/4 cup sun-dried tomatoes

1/4 cup dried tomatoes

1 Tbsp. dried onion flakes

 

Directions: Layer all ingredients in a 16oz jar. When ready to eat, put all ingredients in boiling water and cook according to pasta directions. Add salt, pepper, and olive oil to taste. 

 

Moroccan Soup: 1 16oz jar

1 cup quinoa, dry

1/2 cup red lentils, dry

1 cup green lentils, dry

1/4 cup dried onion flakes

1/2 tsp. garlic powder

1 tsp. coriander

1 tsp. turmeric

1/2 tsp. cumin

1/2 tsp. ground red pepper

1 tsp. sea salt

2 bay leaves

 

Directions: Layer all ingredients in a jar. When ready to cook, boil 7 cups of broth or water and cook for about 20 minutes, or until lentils are tender. Can add extra veggies too or 1-2 Tbsp. olive oil if needed.
